August's Passport takes us to the Langbiang Mountains of southern Vietnam, where Zanya Coffee is helping change the conversation around Vietnamese coffee. Founded by husband-and-wife team Marián and Lim, Zanya works with farmers throughout Lâm Đồng Province to showcase the incredible Arabica coffees being grown in a country that's long been known almost exclusively for Robusta.
This lot comes from a single washing station in Lạc Dương District and is processed using a meticulous double ferment washed method. The cherries are sorted, fermented, washed, soaked, and then dried slowly on raised beds for up to twenty days. The result is an incredibly clean, sweet, and balanced cup.
What surprised us most about this coffee is how approachable it is. Toffee brings a rich sweetness, honeysuckle adds soft floral notes, and tamarind gives the cup a bright, tangy finish that keeps everything lively without overpowering it.
One of the things we love most about the Passport Program is introducing coffees from places people may have overlooked. Vietnam has always been one of the world's great coffee-producing countries. Coffees like this remind us that some of its most exciting chapters are only just beginning.
