July's Passport coffee takes us to the lush highlands of Cajamarca, Peru, where Gilmer Cordova manages Finca Ecológica Agua Colorada, a farm originally established by his father, Filadelpo Cordova Mejia, in 1990. Situated at 1,850 meters above sea level, the seven-hectare property is surrounded by native shade trees and benefits from the cool temperatures, fertile soils, and dramatic mountain landscapes that have made Cajamarca Peru's most important coffee-producing region.

Gilmer represents a new generation of Peruvian coffee producers. Passionate about quality and environmental stewardship, he relies on compost and guano rather than chemical fertilizers and avoids herbicides altogether. Every cherry is picked by hand at peak ripeness, a meticulous approach that allows the fruit character of the coffee to fully develop before processing.

This lot is a natural process Caturra, a variety known for its sweetness, balance, and elegance in the cup. After harvest, the cherries are carefully dried with the fruit intact, concentrating sugars and creating a layered, expressive profile. The result is a coffee that feels both delicate and vibrant. Notes of white strawberry bring a soft berry sweetness, cherry blossom contributes a floral elegance, and macadamia rounds everything out with a creamy, nutty finish.

As a traceable microlot, this coffee represents both the craftsmanship of a single producer and the growing movement toward farm-specific coffees in Peru. It is a beautiful example of how careful farming, thoughtful processing, and exceptional terroir can come together to create something truly memorable.

This one feels very "Passport Program" to me because it's not just an origin people know, it's a specific farmer, a specific farm, and a glimpse into the next chapter of Peruvian specialty coffee.
